For Cakes:
4oz Sugar
4oz Margarine (You can use butter, but margarine tastes better to me)
4oz Self Raising Flour
2 Large Eggs
Method:
1. Preheat the oven to 170 Degrees celsuis (Fan Oven)
2. Add all of the ingredients to a large bowl, and mix using an electric whisk
3. fold in the vanilla extract (add according to taste)
4. Spoon the mix into cupcake cases (I like to use an icecream scoop so I can get an even amount in each case) I like to fill the cases at least half way
5. Place in the oven for 15-20 minutes (Until a light golden brown colour)
6. set the cupcakes on a cooling rack until are cooled
7. Proceed to ice with buttercream or frosting, or just eat alone.
And that's it, you're done!
